Visited my cousin's place in Austin, her counter compost jar made me want to scream

I went to see my cousin last week in Austin and she has one of those open ceramic compost crocks just sitting on the counter, no lid, no filter, nothing. It was half full of banana peels and coffee grounds and there were tiny fruit flies circling it like a little airport. I asked her if she ever empties it and she said 'when I remember' which apparently means every 10 days or so. The whole kitchen smelled like a dumpster behind a smoothie shop. How do you folks keep a counter bin from turning into a fly hotel without buying a $60 stainless steel thing with a carbon filter?

Went through three compost jars before admitting I'm the problem, not the flies.
