I used to roll my eyes at paleo diet people claiming ancient grains were better

Then I actually read a 2021 study on dental calculus from a Neolithic site in Turkey. They found that early farmers had way fewer cavities than us despite eating mostly wheat. Turns out it wasn't the grain itself, it was that they ground it coarsely and didn't add sugar. Now I kinda get why my dentist bugs me about white bread. Has anyone else changed their mind about a food myth after seeing actual archeology evidence?

Stone grinding leaves way more fiber intact than modern roller mills, that's probably half the battle right there. A coarse stone ground flour will digest slower and not spike your blood sugar the same way.

Ask @simontorres does stone ground also keep more of the wheat germ intact?
