That day I realized I had been frying eggs on too high heat for 15 years
I was at my sister's place in Tucson last spring watching her make breakfast. She put the burner on medium and I laughed, said that'll take forever. She just looked at me and said you're burning the bottom every time, that's why your whites are always crispy. I thought about it and she was right. I had been frying eggs on high heat since college because I was in a hurry. Tried it her way the next morning and the eggs came out perfect, soft whites and runny yolks. Now I set the dial at 4 out of 10 and wait an extra minute. Anyone else get called out by a family member for a cooking habit you thought was normal?

Medium heat for eggs is key. "Crispy whites" is a dead giveaway.
