The old diner on Route 9 closed, now I ask locals for breakfast anywhere I go

There was this place, Frank's, off Route 9 in Jersey. Not fancy, but they knew my order after two visits. Then the owner retired last fall, sold the lot to a gas station chain. Now when I travel for work, I stop at a gas station or a chains and get the same boring eggs. Started asking the cashier or a trucker where they actually eat. Have had some real gems that way, like a place in Scranton that made hash from scratch. Anyone else lose their go-to spot and had to switch up how they find food on the road?
