Debate: Stacking filters in Photoshop vs getting it right in camera

I used to just blast the contrast and saturation sliders in post, but after seeing how flat my raw shots from last July looked compared to a friend's single exposure, I switched to taking multiple calibrated frames. What's your process for getting the colors to pop without making the image look fake?

Man I feel you on that, raw files can look so dead compared to what you thought you shot.

Isn't that true about a lot of things though? We tend to see the polished final version of everything and forget about the messy middle.
