Burned my hand on a bakery rack at the county fair last weekend

I was pulling out a tray of cinnamon rolls and the rack tipped forward because I didn't lock the wheels. Has anyone else had close calls with those mobile racks and found a good way to keep them stable?

Did you have the brake pedal pressed down or did you just forget about it? A buddy of mine was unloading a hot sheet pan a few years back and the whole rack started rolling away from him, sending pans everywhere. He started blocking the wheels with a folded up floor mat from the booth and that seemed to work okay until he could get a rack with better brakes.

Read a safety report once that said never use floor mats as wheel chocks since they can slip.
