Found out my bakery’s butter costs went up 22% in the last year from my supplier’s invoice last Tuesday
I was going over the numbers for our croissant batch and nearly dropped my pen when I saw the price jump, has anyone else noticed their dairy supplier sneaking in hikes like that?

Yeah that's rough, a 22% jump on butter is no joke especially for croissants where it's basically the whole deal. Did you check if it was just a base price hike or if they switched up the butterfat percentage on you without saying anything? I've seen some suppliers try to trim costs by quietly changing the product specs. Might be worth calling them out on that if you haven't already.

Oh man, you're totally right about the butterfat trick. I didn't even think of that angle but it's exactly the kind of thing suppliers pull these days. They know most bakers are too busy to check the spec sheet on every single order. I've seen it happen with cream too, they drop the fat content by a couple percent and hope no one notices the difference in how it whips. You should definitely ask to see the product data sheet for the new butter batch. A 22% price jump with no change in fat content means they're just gouging you. But if they quietly went from 84% to 82% butterfat, that's a whole different story and honestly kind of shady.
