Had to pick between a stand mixer and a hand mixer for my small apartment
I moved into a place in Portland last month with barely any counter space. I went with a cheap hand mixer instead of my usual KitchenAid because I just couldn't fit it anywhere. Honestly, it's been fine for cookies and quick breads but I really miss being able to knead dough without my arm getting tired. Has anyone else had to downsize their gear and regret it or was it worth the trade off?

The trick nobody talks about is using a hand mixer with dough hooks on a low speed setting for longer then you think you need to. I do that for my pizza dough and it actually works okay if you let the mixer rest every few minutes so it doesn't burn out. Your arm still gets a workout but not nearly as bad as doing it all by hand.

Saw a video from a baker once who said the real secret is warming the dough slightly before mixing, makes it way easier on the mixer. @jade_grant95 your method sounds solid though, I might try resting the mixer between batches next time. Idk if my cheap hand mixer would survive a full pizza dough otherwise.
