Serious question, is a 12 cup food processor actually worth it over hand chopping nuts?
I used to chop walnuts and pecans by hand with a cheap $8 knife for years, and I always thought machines were for lazy bakers. Then I watched a pastry chef at a shop in Portland run 3 pounds of almonds through a 12 cup Cuisinart in about 90 seconds and I got jealous. Now I'm torn, because the cleanup and the risk of turning nuts into butter makes me wonder if the old way was better. Anyone here switch over and actually stick with it?
Switched from hand chopping to a 12 cup Cuisinart about two years ago and never went back. The trick with nuts is pulsing in short bursts and not letting it run, otherwise yeah you get almond butter real fast. Cleanup is honestly not bad since the bowl and blade just go in the dishwasher. Chopping three cups of pecans by hand used to take me fifteen minutes and now it's under a minute, so for holiday baking it paid for itself pretty quick.
