Warning: Today's yeast isn't as strong as it used to be

My bread often ends up dense. Yeast was always reliable years ago, so I proof every packet now.

Honestly my money's on the flour. I swear the cheap stuff these days is basically powdered cardboard.

What happened to the good old days when yeast just worked? My grandma used to throw it in without a second thought and her bread always rose perfect. She swore by letting the dough rest in a warm spot near the oven, no fancy steps. Now I do everything by the book and my loaves still come out like bricks sometimes. It makes me wonder if they changed how they make the yeast or if we just forgot how to use it.

Maybe my bread fails are why yeast needs instructions now.
