Appreciation post: I thought chilling cookie dough was pointless until my last batch spread into one giant sheet

Left a batch in the fridge overnight on a whim, and they came out perfectly thick and chewy. Anyone have other 'unnecessary' steps that actually work?

Wait did I just defend chilling dough for years only to forget to do it last week and end up with frisbees? I had to call them "cookie crackers" to save face at the party. You'd think after twenty years of baking I'd remember the one step that keeps them from looking like a pancake breakfast.

Wait, isn't chilling the dough the whole point for texture? Honestly, that step is not just about spread. It lets the flour fully soak up the wet stuff. If you skip it, the sugar melts too fast and you get flat cookies. Tbh, calling it unnecessary is like saying you don't need to preheat the oven. It's a basic step for a reason.
