I always thought stiff peaks took 5 minutes, then I timed my stand mixer and got a number that shocked me
I read on a baking blog that meringue can take 8 to 12 minutes on medium speed, and honestly I thought that was way off. So I set a timer during my angel food cake attempt yesterday and watched it hit stiff peaks right around 9 minutes and 30 seconds. I had been stopping at like 3 or 4 minutes my whole life because I figured glossy meant done. Turns out that shiny soft blob I kept calling stiff peaks was why my cakes kept falling in the oven. The peaks barely moved when I pulled the whisk out this time, and the cake came out tall for once. Has anyone else timed their meringue and gotten a number way higher than they expected?
