I finally compared my grandma's hand-mixed cookie recipe to using a stand mixer

For years I made my chocolate chip cookies the way my grandma taught me, mixing everything by hand with a wooden spoon. Last weekend I tried the same dough using a KitchenAid stand mixer I borrowed from my neighbor. The mixer cookies came out flatter and spread way too much in the pan, while the hand-mixed batch kept their shape perfectly. I think the paddle attachment beat too much air into the dough and warmed the butter up too fast. Anyone else notice a big difference between hand mixing and using a mixer for cookies?

...and that's exactly what I told my neighbor when she asked why her cookies looked like pancakes. Grandma's wooden spoon has been doing covert ops all these years apparently, sabotaging the mixer for the sake of tradition. I tried the same thing with my own recipe and ended up with cookies that looked more like lace doilies than actual cookies. The hand batch came out thick and perfect, like they had a little pride in themselves. Maybe the mixer is just too aggressive for dough that needs to be treated gently, like a grumpy cat. Your grandma's secret weapon is basically just a stick and some patience, and it works better than a machine that costs hundreds of dollars.
