My first sourdough loaf 3 years ago was a hockey puck

I remember pulling it out of the oven back in June 2021 at my apartment in Portland. It was so dense and hard I could have used it as a doorstop. Last month I finally got a springy loaf with some nice ear on top after trying maybe 30 times. Still not sure what I did different this time, maybe the starter was just happier. Anyone else keep a little log of their bakes or do you just wing it like I did?

My baking "log" was just a sticky note with the word "failed" written on it 15 times until I finally scratched out "maybe try less water." Classic.

Lol @the_claire that is literally the most relatable thing I've seen all week. I've got a whole drawer of sticky notes that just say things like "nope" or "why" with no context at all. Honestly the "maybe try less water" part got me because that's exactly how real baking works, you just guess and hope for the best until something finally sticks. Your log is basically a masterpiece of trial and error, way better than those fake perfect bakers who act like they never mess up. Keep that note forever as a trophy.
