My grandma called me out on my bread-baking shortcuts last Sunday
I was bragging to my grandma about my sourdough loaf (it looked pretty good, if I say so myself) and she just looked at me and said it probably tasted hollow because I rush the bulk fermentation. She was totally right (ugh, she always is). I usually cut the time down by about an hour because I get impatient waiting around. She pulled out her old recipe book from the 50s and showed me where she wrote 'patience is the secret ingredient' in the margins. It hit different coming from her because she's the one who taught me to bake in the first place. Now I'm forcing myself to wait the full 4 hours on my next batch. Has anyone else had a family member call them out on a bad habit that actually made a difference?

I read somewhere that sourdough is like a pet that you have to feed and care for on its schedule, not yours. Cutting fermentation time short must mess with the flavor and texture big time. Your grandma's old book with that note is gold, mine has one too with 'don't skip the sifting' underlined three times.
