My mother in law said to never open the oven door during the first 20 minutes
She told me that 3 years ago. Last weekend I got impatient with my sourdough and peeked at 15 minutes. The whole loaf collapsed. Should have just listened.

@hugoj86 is right. Sourdough is just flour and water, but your MIL knows oven peek = flat bread.

Blame the recipe, not yourself. Sourdough is finicky but one peek at 15 minutes isnt gonna wreck it that bad unless the dough was already weak. People act like baking is rocket science but its mostly just flour and water.
