My neighbor's 40 year old pie crust recipe made me trash my digital scale

I've been using a kitchen scale for everything since I got into baking back in 2019, but last Tuesday my neighbor Carol from down the street in Portland stopped by with her lemon meringue pie and told me she eyeballs everything, never measures a thing. She said the trick is feeling the dough, not weighing it, and that she's made that same pie for 40 years without once failing. It hit different because I've had so many crusts crack or shrink that I figured precision was the only answer, but she just laughed and said the butter temp matters more than the grams. Has anyone else gone back to older, simpler methods after trusting fancy tools for too long, or am I the only one who overthought this whole baking thing?

Wait, you're telling me Carol's been winging it since before I was born and my scale's the drama queen?
