The day I realized I was overmixing my banana bread
I made banana bread every Saturday for like two years straight. It always came out dense and kind of tough but I thought that was normal. Then my neighbor tried a slice and asked if I was beating the batter until it was smooth. I said yes and she told me that's the problem you're supposed to stop as soon as the flour disappears. Now my bread is fluffy and I'm wondering how many other basic things I've been doing wrong. Anyone else have a moment where someone pointed out a simple baking mistake you never saw coming?

Three years of dense banana bread and I honestly don't see the big deal. I mean, yeah, fluffy is nice and all, but a little density never killed anyone. My grandmother used to beat her banana bread batter until her arm gave out and we all loved it. I just think sometimes people get a little TOO precious about baking techniques, like one wrong move and the whole loaf is trash. If it tasted fine to you before, maybe just keep doing what worked?
