Why did nobody tell me to weigh flour for cookies? 12 years of fluffy mess
I have been baking chocolate chip cookies since I was 20, and they always came out cakey and pale. Last Tuesday my sister watched me scoop flour straight from the bag and just shook her head. She handed me a $15 kitchen scale and said 'try 180 grams instead of a packed cup.' I did the math and realized I was adding maybe 30% more flour every single batch, which explains why my cookies never spread. That one switch fixed the texture instantly, and now I'm mad at every recipe book that said '2 cups' without a weight. Has anyone else had a tiny tool like that completely change their end result? I feel like I need to re-try all my old recipes now.

and honestly the scale changed my whole baking life too... I had the same problem with my banana bread, always dense and wet in the middle no matter what I did. Turns out I was packing the flour so tight it was like a brick, and the recipe actually needed way less than I thought. Now I weigh everything even when the recipe gives cups, and my bread comes out light every single time. It's crazy how one little habit can fix years of mediocre results.
