My grandma's $1 bean trick still beats everything modern

Was chatting with my grandma last week about how I spend like $15 on canned beans every month. She laughed and told me she used to buy a 2 pound bag of dried pintos for like $1.50 back in the 80s. Said she'd soak em overnight, cook em with a ham hock, and feed the whole family for days. That really hit different cause I've been paying for convenience without even thinking about it. Now I'm looking into buying dried beans in bulk from the Mexican grocery down the street. Anybody else make the switch from cans to dried and actually stick with it?

Have you tried sprouting the dried beans for extra nutrition?

Start soaking them overnight first, then rinse twice a day until you see little tails poking out. It usually takes 2-3 days depending on how warm your kitchen is. I've had pretty good luck with mung beans and lentils, but chickpeas can be a bit tricky if you don't keep them moist enough. Just watch out for any funky smells, that means they went bad and you gotta toss them. The texture gets a nice crunchier bite that's pretty satisfying in salads or stir fries.
