Overheard my neighbor say she feeds her family of 4 on $60 a week using a meal prep system

She was telling someone at the bus stop about cooking a whole chicken on Sunday and stretching it into tacos, soup, and sandwiches for five days. Has anyone actually tried making a $60 weekly grocery budget work for more than one or two people, or am I just bad at math?

Has she actually priced out a whole chicken lately? Groceries are wild right now, I'm not sure how she's getting four people through a whole week on that unless they're all under 5 years old.

Yeah, the whole chicken thing got me too. I mean, I tried something similar last year when I was really trying to stretch our budget. I bought a chicken, made a meal on Sunday, tried to do the tacos and soup thing. But then I realized I was making a second trip to the store for tortillas and shredded cheese and stuff I didn't think about, and suddenly I'd spent another $25 on little things that somehow added up. Plus, my kid refuses to eat chicken soup if it has any vegetables in it, so I ended up making a separate batch of noodles for him. The whole system kind of fell apart by Wednesday.
