Saw a clever trick at the farmers market in Boise this morning
One of the veggie stands had a big basket of 'soup packs' for $3 each, just random leftover bits like carrot tops, onion skins, and celery ends. The seller said it's perfect for making stock and cuts down on waste. Has anyone else found a good spot for cheap soup starters like that?

Oh that's such a smart idea. Honestly, I save all my veggie scraps in a gallon bag in the freezer until it's full, then just dump it in a pot with water. Ends up being basically free stock and it tastes way better than the boxed stuff.

and honestly if you toss in some parmesan rinds too it takes it to another level. i keep a separate bag just for those, add them with the veggie scraps, and it gives the stock this savory depth you can't get from anything else. also don't sleep on roasting the scraps in the oven for like 20 mins before boiling them - it adds a way richer flavor, like what you'd get from a fancy restaurant.
