Shoutout to the day I realized I was cooking rice wrong for 10 years

I always rinsed my rice once and wondered why it came out gluey, then my sister watched me make it and was like 'dude you need to rinse until the water runs clear' and it was like a lightbulb went off. Has anyone else had that moment where a small tweak completely changed a staple meal for you?

Exactly though, I'm kind of on the other side of this. Rinsing until the water runs clear is great for some things but I actually prefer a little bit of sticky rice for most of my meals, especially when I'm eating it with a stir fry or a saucy curry. I tried the super rinsed method and the rice was so dry and separated that it didn't soak up any of the sauce, just sat there like little pebbles. What kind of dishes are you normally pairing your rice with?

Read an article a while back that said the same thing, apparently the starch coating on rice is what makes it sticky. Turns out if you're making something like fried rice, you even want to let it sit in cold water for 30 minutes before cooking. Tried that trick with some jasmine rice last week and it came out way fluffier than my usual gluey mess.
