Tried making a whole chicken in that $20 slow cooker from Walmart... ended up with soup instead of roasted meat
Picked up a 5 pound bird on sale for $4.50 last week and tossed it in the slow cooker thinking I'd get that crispy skin everyone talks about. Nope... came back 8 hours later to a pot full of broth and the chicken falling apart into shredded bits. Learned that slow cookers just steam everything, so now I save the slow cooker for beans and use the oven for roasts... any tips for getting flavor out of a cheap roaster without drying it out?

That crispy skin everyone talks about" had me laughing. I've made that exact mistake before. The slow cooker just turns everything into a wet mess unless you finish it under the broiler for a few minutes. If you want flavor without drying it out, try spatchcocking the bird and roasting it at 425 for about 45 minutes. The flat shape cooks evenly and the skin actually gets crispy.
