I finally splurged on a $300 meat slicer and it paid for itself in a month

Honestly, I was tired of my arm cramping up from slicing bacon and roasts by hand at the shop. Found a used Hobart on Craigslist for $300, figured even if it died in 6 months it'd be worth it. That thing sliced through a whole pork belly in like 3 minutes flat last Saturday. The savings on pre-sliced stuff from suppliers already covered the cost. Anyone else take a chance on a used piece of equipment and get lucky?

Picked up a used Berkel gravity feed slicer at an auction for $200 last year. It had a tiny chip in the blade but after a quick sharpen it cut through a whole prosciutto leg in under 10 minutes. The local butcher shop wanted to charge me $50 just to slice one, so I saved that money the first time I used it at home. Have you had to replace any parts on your Hobart yet?

My buddy who runs a deli told me Hobarts are pretty much tanks, so you probably got a steal. I read somewhere that the real trick is keeping the blade guide clean, otherwise they start wandering on thicker cuts. You ever have to adjust that thing?
