I thought that new vacuum tumbler at the shop was just a gimmick until we tried it on a batch of corned beef.

Wait, are we talking about the same vacuum tumbler they use for like, fancy restaurant steaks? For corned beef? That's like using a race car to go get the mail. It's a boiled brisket with pickling spice, not some delicate cut that needs perfect tenderizing. The whole point is it's supposed to be simple and kinda rustic. Next they'll tell me I need a sous vide machine for my boiled hot dogs.
