Overheard a customer tell their kid that butchers just "cut meat" and I had to bite my tongue

Spent 15 minutes explaining to a chef last week how we actually break down primals for their menu and had to stop myself from walking them through whole-animal breakdown right there at the counter, anyone else get tired of people thinking we just slice steaks all day?

Had a buddy who runs a whole-animal operation get asked if he could "just trim the fat off" a pork shoulder like it was a simple trim job. He spent twenty minutes explaining the different muscles and how each one needs a different cut for the best texture. The customer just nodded and asked for it ground instead.

@skyler516 the ground pork thing kills me, done that same exact dance more times than I can count.
