The day I ruined 30 pounds of pork shoulder at a state fair demo

I was doing a cutting demo at the Iowa State Fair back in 2022, showing folks how to break down a whole shoulder. My knife was dragging bad and I kept getting ragged edges on the muscles, finally stopped and realized I had been using a steel that had a bent tip for like 2 years. A guy in the front row named Mike yelled out "your edge is catching on the fat cap" and I felt my face go red. Has anyone else had a demo go sideways because of a simple tool problem you ignored?

Kind of wild how a tool you look at every day can become invisible to your own eyes lol. Mike sounds like the real MVP for speaking up.
