TIL a $9 pork loin from HMart beat my $40 prime ribeye

I watched the counter guy at HMart in Flushing hand-trim a shoulder for 6 minutes and realized fat rendering beats marbling for flavor, so has anyone else switched up their cut of choice after seeing a pro work?

So is the butchering show just free entertainment that ends with you buying groceries, or did you leave a tip in the meat case? Guess I've been paying for the privilege of slicing my own steak wrong this whole time.
