Why does nobody talk about writing your salary number down before the call?

I froze up on a call with a recruiter in Chicago and blurted out a number $8k lower than what I actually wanted. After that mess I started writing my target number on a sticky note and sticking it right next to my laptop screen. Sounds dumb but I nailed the number on my next 2 calls without stumbling. What's your trick for holding the line when they ask what you're making now?
