Leveling compound dried before I could pour it, what a mess

Last Tuesday I mixed up a full bag of self leveler for a small bathroom floor, but I was too slow getting it out of the bucket. It started setting up right in the middle of the pour, so I had about 15 minutes of frantic scraping and re leveling before giving up. It took me three hours total to fix the lumps and patch holes that should've taken one. Has anyone else had luck with those mixing drill attachments, or is it just about batch size and moving faster?

My buddy Dave tried one of those paddle mixers and it actually made things worse because it whipped air into the mix. He ended up with a spongy floor that took forever to cure. Honestly, the only thing that saved him was doing half batches and having a second person ready to pour while he mixed.
