Found a trick for fixing broken hollandaise without starting over

I was making eggs benedict for a busy Sunday brunch last month and my hollandaise split right as the tickets started piling up... Instead of tossing it, I grabbed a clean bowl and whisked in a teaspoon of cold water drop by drop while slowly adding the broken sauce back in. It came together smoother than the original batch. Anyone else have a go-to emergency fix for sauces that go wrong at the worst time?

Drops of ice water work even faster to shock it back together.

Hitting a frozen ignition coil with ice water can crack the plastic housing 40% of the time according to a 2023 shop study I read, making a cheap fix turn into a $200 replacement.
