Got told my sauce was too thin by a diner at the window. Changed my whole approach to stocks.

Thin sauce can be a game changer though. Some of the best pasta dishes I've ever had relied on a light broth-like finish that clings to the noodles without drowning them. A heavy reduction can overpower the ingredients underneath if you're not careful with your seasoning. Maybe that customer just prefers a different style of cooking but thin doesn't automatically mean wrong.

Right? @troy_owens you're spot on. I had this spaghetti aglio e olio at a tiny place in Boston once, the sauce was basically just garlicky oil and pasta water, but it coated every strand perfectly and let the chili flakes shine through. That light broth-like finish actually feels way more intentional than a thick sauce that just sits on top of the noodles. It's all about balance, not thickness.
