Had a brutal week where 3 souffles collapsed in a row on Friday night service
Lost the first one when someone slammed the oven door, second one had a bubble I missed, and the third just decided to quit on me mid-bake at 8pm in a packed house in Chicago - has anyone else gone through a souffle nightmare like that?

Had a brutal week where 3 souffles collapsed" - I mean, did anyone die? It's dessert, not open heart surgery. Sure it's annoying when a fancy egg foam flops, but you're acting like you lost a limb. Chicago has plenty of deep dish to fall back on if the souffle thing isn't working out.

Three shrimps though, thats rough. Maybe try adding a tiny bit of cream of tartar next time, I swear it gives the whites a little more backbone. From one souffle soldier to another, the fourth one is the charm.
