Hit 200 covers solo on a Saturday night and actually kept my cool

We had two line cooks call out sick before service last Saturday, so I ended up running the whole station by myself from 5 to close. Took 150 orders before 8 and another 50 after, never had to comp a single dish. Has anyone else had a shift that tested your speed like that?

Those 200-cover nights really test your muscle memory and organization. Had a similar situation a few years back during a Valentine's Day rush when the ticket machine broke and we had to call out orders by hand for four hours straight. That kind of pressure either makes you a better cook or makes you quit the industry altogether.

Yeah @troy_owens is right, it's wild how that same pressure shows up in all kinds of jobs not just kitchens.
