I was dead set against using a mandoline until I sliced my finger last Tuesday

Been cooking professionally for 12 years, always thought mandolines were a crutch. Just use a sharp knife and take your time, right? Well, I was prepping 40 pounds of potatoes for gratin last week at The Wooden Spoon in Portland and got careless on the last 3 pounds. 8 stitches and a lot of lost time later, I bought the Benriner off Amazon that night. First day back with it I flew through prep in half the time. Still kind of hate admitting it was worth it. Anyone else have a tool they swore they'd never use but ended up relying on?

Admitting you were wrong about something is the hardest thing to do.

Nah man, a mandoline is just another thing to clean and store. A sharp chef's knife with proper technique beats it every time for control. 12 years without one and zero stitches, just saying. Cutting yourself is a wakeup call to pay better attention, not a reason to buy a gadget.
