Just hit 500 covers solo on a Friday night for the first time

I've been lead line cook at this spot in Portland for about 8 months now, and last Friday we got slammed out of nowhere. I looked up and realized I had personally fired and plated 500 entrees by myself from 5pm to close. It surprised me because I usually top out around 350 on a busy night, but everything just flowed right. No tickets lost, no comped plates, and my expo even said 'you killed it tonight' which felt pretty good. Anyone else ever hit a number that just made you stop and realize you're getting faster?

and here i was feeling proud of myself for hitting 300 on a tuesday. 500 is like some kind of wizardry my friend. you must have been moving like a ninja back there. i bet your ticket machine was smoking by the end of the night. your expo said "you killed it" which in kitchen speak basically means they want to buy you a beer or promote you on the spot. next thing you know youll be doing 600 and wondering if theres a problem with the fryers.

500 covers solo is wild, but it's the same feeling I get when I realize I'm suddenly paying off credit cards faster than I expected. You don't notice the small improvements until one day everything just clicks, like the system finally works for you instead of against you. It's that moment where you realize all the little annoying habits you fixed over time actually added up to something real. Makes you wonder why we don't pay more attention to those small wins when they're happening.
1
