Pre-made dough at the market across from my kitchen is a joke.
I bake bread early every morning for my restaurant. Lately, I see a stall at the morning market selling what they call artisan loaves. But I know they use pre-made dough from a factory. It tastes like cardboard and has no soul. Customers buy it because it's cheap and looks good. I've had regulars ask why my bread costs more. I explain the time and skill, but some still go for the cheap stuff. It makes me want to scream. We need to value real food again.

Your "no soul" comment reminds me of a blog post calling that bread edible disappointment.

That blog post really nailed it. Calling some bread an edible disappointment is too kind. It's more like a sad, fluffy sponge that gave up on its dreams. You can feel the soul leaving the loaf when you pick up that plastic bag at the store. The worst part is it still somehow manages to be both dry and gummy at the same time. A real feat of modern food science, I guess.

Love that blog post phrase, it's so spot on. James_martin93 is totally right that some bread just has no life to it. The worst is that super soft, packaged white bread that tastes like sweet air and sticks to the roof of your mouth. It's like they forgot to put the actual flavor in the bag.
