Shoutout to the butcher who told me my knives were way too dull

I was at a restaurant supply store in Denver last month, and the old butcher behind the counter grabbed my chef's knife and just laughed. He said most of us in the industry are working with blades that are 60% duller than we think, and it's actually making us cut slower and sloppier. He showed me his 8000 grit stone and how a razor edge lets you glide through a case of onions in 12 minutes flat. Anyone else ever had a pro call out your gear in public like that?

Buddy of mine had a barber do that with his scissors once.

Dude, right? I had a barber once try to trim my sideburns while I was looking down at my phone and he totally slipped. Left a little bald patch above my ear. Couldn't believe it, @hart.ryan. Had to wear a hat for two weeks while it grew back, felt like an idiot.

And it's funny how we just trust these everyday pros with sharp objects near our heads without thinking twice, right? Like, we hand over our safety to someone we barely know, just because they call themselves a barber.
