Shoutout to the guy who told me to try a vacuum sealer for my prep

I thought it was just a gadget for home cooks, but after borrowing one for a week, I saved three hours on a 50-portion beef bourguignon prep. Anyone else have a piece of gear they were wrong about?

Wait you made 50 portions of beef bourguignon... that's a crazy amount of food.

Yeah that's a massive batch to cook. I can only imagine the work that went into prepping all that beef and chopping veggies. My back hurts just thinking about standing over a pot that big. Did you have to borrow every Dutch oven in the neighborhood?

Oh man, @the_logan, you're not wrong. I think my wrist still cramps up just thinking about dicing all those carrots and onions (I swear I found diced veg in my dreams for a week). And yeah, I definitely had to borrow my neighbor's big stockpot because my regular Dutch oven was way too small for 10 pounds of beef. Honestly, I spent more time cleaning the burnt-on fond off the bottom of that pot than I did actually eating the stew, haha.
