That Friday dinner shift broke me in a good way
Last Saturday at the bistro downtown we did 115 covers with a two person line. Grill station alone fired 42 steaks plus 60 salmon fillets that night. Ticket rail never dropped below 8 tickets for four straight hours. I heard my expo yell 86 ribeye at 9pm and felt actual relief. Every plate went out within 12 minutes of the ticket printing. Has anyone else had a shift that just clicked perfectly even when it should have been chaos?

Had a buddy who worked a Valentine's Day at a steakhouse. They ran out of table bread by 7pm and just kept going. He said every ticket felt like muscle memory, no one yelled, no one dropped a plate. Clocked out at midnight and just sat in his car for ten minutes not believing it went that smooth.
