Warning: Check your walk-in cooler seals before summer hits
I was doing a prep shift at a place I used to work at in Phoenix last week and noticed the walk-in cooler wasn't holding temp right. The rubber seal on the door was cracked and letting cold air bleed out all night. They had been losing about $80 a week in spoiled produce and nobody even checked. Has anyone else had a cooler fail on them during a busy season?

Happened to me at a spot in Tucson last August. Walk-in was fine in the morning but by 3pm the milk was sitting at 45 degrees. The seal was all cracked and warped from the heat, had a gap big enough to stick my pinky through. The owner lost a whole case of heavy cream and like 40 pounds of chicken before someone finally pulled the door stop out of the back and realized what was going on. Total nightmare during the dinner rush when you're already short on time.
