Was dead set against using a mandoline until I sliced my knuckle for the third time last month
After 12 years in kitchens I finally caved and bought a Benriner and now I'm mad at myself for all those years of shaky knife work on potatoes and onions, anyone else hold out on a tool for way too long?

Is it just me or does that happen with a bunch of stuff in life? I fought getting a rice cooker for years cause I thought it was a waste of space, but now I use it like three times a week and wonder why I was boiling rice in a pot like a caveman. Same thing happened with a good pepper grinder - I used those cheap disposable ones forever until a friend got me a real one and I felt dumb for not upgrading sooner. It's like we get stuck in some weird pride thing about doing things the hard way, even when the easy fix is right there.
