Watched a line cook handle 15 tickets solo in Portland last Saturday

I was grabbing a bite at this small spot in Portland and saw one guy run the entire dinner rush. He had 15 tickets up at once and didn't miss a single pickup time. How do you build that kind of focus when everything hits at once?
