Why does nobody talk about how useless those pre-cut mise kits are?

I spent $60 on one of those branded prep boxes at the restaurant supply store last month, thinking it'd shave time off my line setup. The onions were diced uneven, the herbs were already wilting, and the mushrooms were sliced way too thick for anything I actually cook. Cooked a service with it and threw out half the contents that night. Has anyone else burned cash on these things, or am I just unlucky with the supplier in Portland?

Honestly, the "diced uneven" part hit home for me. I grabbed one of those kits last fall and the onions were basically half mince, half chunks, which is useless when you're trying to plate something clean. Tbh, I think they're just a trap for people who forget how fast you can do it yourself with a decent knife.
