Stumbled into a climate-friendly coffee shop that blew my mind

So I was in Portland last Tuesday grabbing a quick coffee and this place had a sign saying they track every cup's carbon footprint. I thought it was some gimmick but the barista pulled up a screen showing like 0.3 pounds of CO2 per latte. They also had a little garden out back where they composted all the used grounds and grew herbs for the syrups. Has anyone else run into a cafe doing something similar that actually works?

Portland's 0.3 pounds per latte seems low, but I bet the composted herbs in the syrups actually taste better than the fake stuff.

Oh man, the "composted herbs" part really got me. I had a lavender latte at this tiny shop in Eugene once, and they literally used herbs that looked like they came straight from a garden compost bin, all wilted and random. But honestly it was the best latte I've ever had, so earthy and fresh. The fake syrups they use at chain places just taste like sugar and chemicals to me now. I've started making my own simple syrups with leftover herb scraps from my garden, and it's way better than anything I'd buy. That 0.3 pounds per latte thing makes total sense when you think about how much waste those fancy pumps and plastic bottles create.
