A barista in Seattle told me my pour was too fast and it made my coffee taste sour. I slowed it down and it fixed it.

Yeah, I read somewhere that a slower pour helps get more flavor out of the grounds. Makes sense why rushing it would taste off.

My V60 brews got way better after I started counting to ten between pours.

Totally, I started doing a five count between pours last month and it fixed my sour brews. That extra wait just lets the water drain properly.
