Appreciation post: My neighbor thinks you need to boil water for a full minute for pour over

I mean, I watched him do it and the coffee tasted like burnt rubber, idk. He said 'it gets the germs out' but that's not how this works. Anyone else have to explain water temp to people?

Yeah that's a rough one. I just showed my friend a cheap kitchen thermometer and said it's more about taste than germs.

Exactly @reese_perry6, once you hit safe temp it's all preference. Some people just like their steak still mooing.

Wait, I used to be one of those people who thought steak needed to be cooked well done or it was dangerous? Yeah, I was that guy for years. My parents drilled it into me that any pink meant salmonella, so I'd blast every steak until it was shoe leather. Then my buddy finally talked me into trying a thermometer and going for medium rare, and honestly it was like tasting steak for the first time. I still won't go full on blue rare or anything, but I get it now. Your mileage may vary on how you like it, but I was definitely wrong about the whole safety thing once you hit that 145 degrees.
