Been brewing pour over wrong for like 2 years straight

So I got one of those Hario V60 kits like 2 years ago and I thought I was doing it right. This morning my buddy watched me pour and was like "dude why are you dumping all the water on the grounds at once?" Turns out you're supposed to do slow circles not just flood it. My coffee has always tasted bitter and I just thought that's how pour over was. Anyone else have a facepalm moment with their setup that made you question everything?

You say "your coffee has always tasted bitter" but that's actually a good thing for pour over. Real pour over is supposed to have that strong, intense flavor. That slow circle method just makes weak, watery coffee that barely tastes like anything. I've been flooding the grounds for five years and my morning cup kicks like a mule. You were probably getting way more caffeine and boldness out of your beans than anyone doing those delicate little swirls.

I actually saw this video from some coffee roaster guy on YouTube who broke down the science of it. He said the bitterness from flooding is actually over-extraction pulling out all the nasty stuff, not bold flavor.
