Finally got my pour-over timing right at a shop in Portland last weekend

The barista there let me watch her process and I realized I was pouring way too fast for the first 30 seconds, has anyone else dealt with that bitter edge from rushing the bloom?

Oh man, rushing the bloom is such a rookie mistake... I did that for months. Water too fast into dry grounds just makes everything bitter and uneven. Slow pour for the first 45 seconds changed my whole morning cup.

Buddy of mine kept complaining about bitter coffee for weeks. Finally watched him pour and he was dumping a full cup of water straight onto fresh grounds like a waterfall.
